On clay and limestone soils, the vines are south-facing terraces surrounded by woodland.
Picked in the same way as the others grapes after being destemmed and put into the vat, the maceration will last between 8 to 10 days to extract the color and tanins. In order to give good structure to the wine.
The temperature controlled fermentation keeps the fruitiness.
When wine is finished, it is racked several times before diatom filtration.
The wine spends several months in the vat. After wards it is put into oak barrels for 8 months.
Suggestions to accompagny this wine :
You'll appreciate it with red meat, roast, paultry, with good cheese 'camembert", "époisse", "munster".
Ideal serving temperature :
At around 18° c - 20° c
